Cranberry Cider Stuffing

Whether you’re looking to compliment our vegan Ham Roast, or scouring the interwebs for delicious cranberry cider stuffing, this recipe will be your new go-to for celebrations. For a fun twist on convention, we’ve added a touch of Hopworks Urban Brewery’s Hard Cider. Better double up on the recipe, 2nd day stuffing is pretty amazing, right?

what you’ll need:

1 tablespoon non-GMO canola oil
¾ cup finely chopped onion
½  cup finely chopped celery (about 1 rib celery)
¾ teaspoon sea salt
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon granulated garlic
4 cups whole wheat bread (½”) cubes
1 ½ cups cooked pearl barley or wheat berries
⅓ cup dried cranberries
¼ cup finely chopped dried apples
½ cup HUB Hard Cider 
¼ cup water

how to make:

  1. Preheat oven to 350˚F. Lightly oil an 8” square baking dish.
  2. In a medium skillet, warm oil over medium heat. Add onion and celery and cook, stirring, until softened, about 5 minutes. Remove from the heat and stir in salt, thyme, sage, and garlic. Transfer to a large mixing bowl and combine with bread cubes, cooked barley, cranberries and apples.
  3. Pour cider and water over stuffing and toss. Transfer stuffing to baking dish, cover tightly with foil, and bake until heated through, about 20 minutes.
