Mardi Gras Muffuletta Sandwich

This spectacular mardi gras muffuletta sandwich embodies the Big Easy. It’s over the top, flamboyant, and absolutely delicious. Mardi Gras, revelers veg-out and save room beignets…then prepare to be rolled home for recovery couch time.

Makes 6 servings

what you’ll need:

1 cup pitted green and kalamata olives finely chopped
¼ cup chopped roasted red peppers
2 tablespoons red wine vinegar
2 garlic cloves, minced
½ teaspoon dried oregano
1 large round Italian loaf, sliced in half horizontally
6 slices vegan provolone-style cheese
1 package Tofurky® Smoked Ham Style Deli Slices
1 package Tofurky® Pepperoni Deli Slices

how to make:

1. In a small bowl, combine olives, red peppers, vinegar, garlic, and oregano.
2. Remove all but ½” of the soft inside crumb of the bread. On the bottom half of the bread, spread half the olive mixture. Layer deli slices, pepperoni, and cheese on top. On the top half of the bread, spread remaining olive mixture and cap the loaf. Cut into 6 wedges.
