Tofurky “Club” Sandwich

 

Description:

Great for the club or any large gathering.


Ingredients:

2 slices whole wheat bread
2 Tofurky Slices
1/2 Avocado, sliced
2 Slices Tomato
1 slice Swiss Cheese (soy, dairy or vegan) Sprouts
2 Strips Soy “Bacon” or Sautéed Tempeh Strips (see below)
Mustard and other condiments to taste.


Directions:

1. Layer bread with mustard and other condiments.
2. Add remaining ingredients.
3. To make Tempeh Strips:
*Cut thawed tempeh into 1/8” thin strips
*Marinate 10 minutes in 2-cup soy sauce, 8 cups water, and 1TBLS. Garlic, 1 TBLS. (enough for approx. 50 five-inch strips)
*Heat oiled grill.
*brown strips on both sides until crisp. Add oil as needed to brown.
*pat strips dry on paper towel.
*alternatively strips may be brushed with oil and broiled until brown in oven
